Mixed Vegetable Curry

Mixed vegetables
(Carrot, beans, peas, potato,capsicum ):1 cup
Green Chilli:3
Ginger garlic paste:1/2 tsp
Turmeric powder:1/4 tsp
Chilli powder:1/4 tsp
Coconut Milk:1/2 cup
Mustard seeds:1/4 tsp
Oil:1/2 tsp
Salt to taste

Preparation Method
1.Heat oil in a pan,add Ginger garlic paste,followed by onions and saute until translucent.
2.Add vegetables, green chillies,turmeric powder and salt with enough water.Cook until the veggies are done.
3.Add chilli powder,tomatoes and cook till gravy is thick.
4.Add coconut milk and allow to boil for few seconds.
5.Season with mustard seeds and curry leaves.,Garnish with coriander leaves.
