Pathiri / Aripathiri / Nicepathiri

Rice flour: 11/2 cups + 2 tbsp
Water: 1 1/2 cup
Salt: little
Preparation Method
1.In a saucepan, boil the water, sprinkle salt to the boiling water.
2.When the water boils, add the rice flour and combine it without lumps.
3.Remove from the heat and combine well till incorporated.
4.Once cool knead well to make a smooth dough.(If the dough is not soft sprinkle some warm water or oil while kneading ).
5.Make balls out of the kneaded dough.
6.Place the dough on a wooden board or chappathi making board.
7.Sprinkle little rice flour over it,  using a rolling pin roll it to a round shape.
8.Keep dusting with rice flour to prevent sticking to the board. (Instead of chappathi board you can also use pathiri press. Apply some oil on it ,place the balls and press gently the two sides. No need to roll out pathiries. Sprinkle some rice flour before placing it in a plate) 
9.Heat a cast iron skillet or non-stick cooking pan over medium heat.
10.Place the pathiri on the pan, when the bottom side just starts to wilt, flip it over to the other side(within 30 second).
11.When light golden spots appears ,flip again
12.Gently press the sides with a spatula, the pathiri will puff up nicely.
13.Remove from the pan.
