Beetroot Pachadi

Beetroot:1/2 cup finely chopped
Coconut grated: 3 tbsp
Onion:1/2 , sliced.
Garlic: 2
Green chilly:2
cumin seeds:1/4 tsp
Mustard seeds:1/2 tsp
Dried red chilly:2
Oil:2 tbsp
Thick Yogurt:3 to 4 tbsp
Curry leaves as needed
Salt to taste

Preparation Method
1.Make a paste of grated coconut,garlic,green chilli and cumin seeds.
2.In a pan, heat 1 tbsp of oil, splutter mustard seeds, add red chilli and curry leaves.
3.Add onion, saute till light brown color.
3.Add beetroot along with salt ,cover and cook till done.
4.Once it is cooked add yogurt,mix well,never let it to boil.
